Smoked BBQ Chicken Quesadillas

Serving: 4 quesadillas
Ingredients:
2 cups cooked and shredded chicken (smoked or grilled)
1 cup shredded cheddar cheese
1/2 cup diced red onion
1/2 cup diced red bell pepper
1/4 cup chopped fresh cilantro
1/4 cup your favourite BBQ sauce
Four large flour tortillas
Two tablespoons vegetable oil
Directions:
In a mixing bowl, combine the shredded chicken, shredded cheddar cheese, diced red onion, diced red bell pepper, and chopped cilantro.
Mix everything well. Preheat a skillet or griddle over medium heat. Lay one flour tortilla on a flat surface and spread an even layer of the BBQ sauce over half of the tortilla. Spoon a generous amount of the chicken and cheese mixture over the BBQ sauce-covered half of the tortilla.
Fold the other half of the tortilla over the filling to form a half-moon shape. Add 1/2 tablespoon of vegetable oil to the preheated skillet or griddle. Carefully place the filled quesadilla on the skillet and cook for about 3-4 minutes on each side or until the tortilla becomes golden brown and the cheese is melted.
Remove the quesadilla from the skillet and let it cool for a minute. Repeat the process with the remaining tortillas and filling.
Once all the quesadillas are cooked, cut each one into 3 or 4 wedges. Serve the smoked BBQ chicken quesadillas hot with extra BBQ sauce or sour cream on the side, if desired.
