Four ears of fresh corn on the cob, husked

Two tablespoons olive oil

One tablespoon chipotle powder (adjust to taste)

One teaspoon garlic powder

Zest of 1 lime

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro leaves for garnish (optional)

Lime wedges for serving (optional)



Preheat the grill to medium-high heat.

Mix the olive oil, chipotle powder, garlic powder, lime zest, lime juice, salt, and pepper in a small bowl. Brush the chipotle lime mixture generously over each ear of corn, making sure to coat them evenly.

Place the corn on the hot grill and cook for about 10-15 minutes, turning occasionally, until the corn is charred and tender.

Once cooked, remove the corn from the grill and place them on a serving platter. Garnish with fresh cilantro leaves, if desired, and serve with lime wedges for extra flavour.
