Caribbean Jerk Grilled Chicken Wings

Ingredients:
2 pounds (approx. 1 kg) chicken wings
1/4 cup soy sauce
1/4 cup freshly squeezed lime juice
Two tablespoons olive oil
Two tablespoons brown sugar
Two tablespoons jerk seasoning
Two cloves garlic, minced
One teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon cayenne pepper (adjust to your desired level of spiciness)
Salt and black pepper to taste
Fresh cilantro or parsley for garnish (optional)
Lime wedges for serving
Directions:
In a large bowl, combine soy sauce, lime juice, olive oil, brown sugar, jerk seasoning, minced garlic, allspice, cinnamon, ginger, cayenne pepper, salt, and black pepper.
Mix well to create the marinade. Add the chicken wings to the bowl and toss them in the marinade until they are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavours to meld.
Preheat your grill to medium-high heat. Make sure to oil the grill grates to prevent sticking. Remove the marinated chicken wings from the fridge and let them sit at room temperature for about 10 minutes before grilling.
Place the chicken wings on the preheated grill and cook for about 20-25 minutes, turning them occasionally to ensure even cooking. The wings should be nicely charred and cooked at an internal temperature of 165°F (74°C). Once the wings are done, transfer them to a serving platter.
Garnish with fresh cilantro or parsley if desired, and serve with lime wedges on the side.
